Ozoz Sokoh turned to food blogging in 2009 as a way to relieve a creeping malaise that was short-circuiting her pursuit of happiness. A geologist living in the Wassenaar, on the western coast of the Netherlands, she was struggling at work and in her quest to find personal purpose. Known for her energy and passion — even for the small things like artful snapshots of her culinary creations — she suddenly felt inert.

“I was also incredibly homesick,” the 40-year-old (who goes by Oz) remembers. “So I began to write as a way to find meaning.” She recorded as she went, documenting new flavors and techniques — from other cuisines as well as Nigerian recipes — “especially the tricky ones like moi moi [bean pudding] and akara [bean cakes], where ratios are key to success.”

Today, Sokoh is back in her native country, where she has become one of Nigeria’s most recognizable chefs, a food photographer and blogger known to her fans as the Kitchen Butterfly — a moniker, she explains, that mirrors her transformation and her love of color, reflected in her dishes, dresses and scarves.

As a child growing up in Warri and Port Harcourt in Nigeria, however, Sokoh did not love food. In fact, she’ll tell you she hated it (except for sweets), excusing herself from the dinner table with her mouth full of food she refused to swallow. Then, when she was 10 years old, her marine engineer father took the family on a trip to Edinburgh, Scotland — phase one of the butterfly’s evolution. After a day running around the festival grounds with her sister Miranda, Sokoh was so ravenous that she found herself devouring food, rather than pushing it away, for the first time. That appetite to discover, sample and concoct delicious dishes drives her still.

Sokoh chose to study geology, a path that led to her job in Wassenaar, but after returning to Nigeria seven years ago, she’s been all about food (while working as a geologist at Shell Global by day). The result is what she calls the New Nigerian Kitchen, a remix of dishes found throughout her homeland that she shares with her 33,000 Instagram followers — and an approach to documenting Nigerian cuisine in its entirety, which she addressed in a 2014 TEDx Talk. Determined to update perceptions that food in Nigeria, a deeply heterogeneous society, is unsophisticated and not worth exploring, she set out — like her namesake, Oz — to offer a magical land of infinite possibilities. Conjuring as many new combinations as her chef’s imagination could muster, Sokoh presents “remixed dishes” at food festivals and cooking events. She’s also at work on a cookbook-slash-memoir, and last year her jollof rice recipe was introduced to a global audience on CNN’s Anthony Bourdain: Parts Unknown.

Her creations run the gamut from jams, drinks and sauces made from agbalumo (African star apple) and zobo (hibiscus) to dishes infused with flavors from the many places where she has lived. Raised in the oil-rich Niger Delta, educated at universities in Ile-Ife (236 kilometers west of Lagos) and Liverpool, England, and employed in the Netherlands, she was exposed to different types of food but admits that moving so much left her disconnected from her native cuisine. But she’s back, bringing an entirely new interpretation that emphasizes innovation, new combinations of flavors and ingredients, and exuberant style and presentation.

But her reimagined delicacies have drawn mixed reactions — some fellow Nigerians became instant fans, while others with more traditional views consider her approach an aberration. “Some people get really outraged,” Sokoh laughs. “They see my exploration as oversabi [overzealous].

“They can’t understand how I’ve gone from A — what we’ve always known, like eating agbalumo out of hand — to Z, new ideas like baking it into a cake or dessert, making drinks from it.” To those who prefer dishes as they’ve always been served, she tries to share her discoveries from living in different places. “We have so many possibilities with our food,” Sokoh insists, but still: “People hear ‘New Nigerian Kitchen’ and think it’s all about being outré.”

If putting a unique spin on traditional Nigerian ingredients and recipes is outré, it’s a label she’s willing to accept. “There are purists that prefer things to be left alone, and there are some food enthusiasts that are happy to try these new things,” says Uzo Orimalade, a Lagos-based culinary expert and CEO of Uzo’s Food Labs. “No matter what side you are on, her recipes get people talking.”

And talk they do — at private dinner parties she hosts for select groups of “cool kids” (artsy expats and newly returned natives like her), on social media and at culinary events such as World Jollof Rice Day. For Nigerians both at home and among the diaspora, this August event has grown into a major celebration of one of the country’s most beloved dishes. A self-proclaimed Jollof activist (“It’s spelled with a capital J, not a small one,” Sokoh corrected a commenter on her blog), she is a fixture at the celebration, crafting new versions of the dish to tantalize her followers and win over new fans.

Isioma Onyegikei, the head chef at Brelunds Food Company, agrees with Sokoh’s food philosophy and the need to document the culinary arts in Nigeria. “I think it’s something that we must all do,” she begins. “Nigeria has a lot of foods owing to our diverse culture, from homemade meals to our variety of street foods. They are worth introducing to a larger audience, and that’s why I think the work of Kitchen Butterfly is important. When more people know about our meals, it adds value to the culinary chain.”

When I first started classes I would flip, poke, and move meat as it cooked. I soon realized it takes a long time to get a perfectly dark sear and that patience was the secret ingredient to a perfect steak. Keep your heat high, flip it once, and stop poking it. When the meat is done, it will release itself — no scraping with a spatula needed.

Well, it seems, just about everything during my recent trip to Western Australia’s capital, Perth. My mission was to attend one of the world’s best food festivals, the celebrity-charged Gourmet Escape Festival in Margaret River, so it would be rude to say no.

If food’s your thing, Australia does gourmet grub so well you might even consider moving there.

The first thing to say about choosing WA’s capital Perth as a gateway to Oz is that it’s on the same time zone as Singapore.

OK, Australia’s not getting any closer but the welcome is still legendary. TV chef Marco Pierre White, who is attending the gourmet festival, says it’s a favourite route Down Under too.

“I also stopped off in Singapore,” he told me, “and I would normally go on to Melbourne. But that batters you, because it’s another three hours on.

“This, without question, was the best journey I’ve ever had. I got to Singapore, I didn’t go to sleep that night and booked into the Raffles, for the simple reason that it’s much nicer sitting in the garden of Raffles than sitting in your bedroom watching peculiar TV! I recommend it, along with the Peking duck.”

Perth is an extraordinary 95 miles from north to south, a mostly suburban strip along the Indian Ocean.

It comes into view from the air after a quilted checkerboard of endless plains. The city itself rises from the sands with skyscrapers glinting in the sun, the result of a booming mining economy.

Eschewing the city centre, we stayed at the luxury boutique-style Alex Hotel in North-bridge where the rooms are contemporary, with exposed concrete ceilings, a wet room-style bathroom and tiny but functional balconies overlooking the city.

There’s also a roof terrace, along with open-plan living areas featuring local hand-crafted pottery. The tone is relaxed and casual, much like the country itself.

Minutes from the Western Australian Museum and Art Gallery, the Alex is well placed if you like to investigate the rapid growth of new, smaller bars, which have sprung up in the nearby streets and alleyways.

You can take a tour of the hostelries – a very sensible idea if you need to make your way back to the hotel safely after a night of indulgence.

The bonus is that these are bars with food; Indian, Italian and Asian. You will soon learn new Australian bar room terms, such as the “roadie” (one for the road) and “session ale”, which speaks for itself.

Generally, it’s a lighter lager from one of the many new impressive craft beer breweries, such as Little Creatures.

My favourite haunt was called Alabama Song, where a beardy DJ will play AC/DC very loud, as often as you like. If you’re feeling adventurous and like rum, try the barely-lit Sneaky Tony’s, which oozes Prohibition.

To recover, the next morning we went to the wonderful Gordon Street Garage, which used to run on the smell of an oily rag but now serves an excellent flat white and toasted fruit bread as you perch on reclaimed bus seats.

It’s more comfortable than it sounds. Slightly further afield is Fremantle, a heritage port town with a vibrant “cappuccino strip”, the legacy of an immigrant Italian influx after the Second World War.

Tour the Fremantle Prison to learn how Western Australia challenged Tasmania for the dubious title of “most notorious convict settlement”.

For food and wine fans all the serious fun begins three hours’ drive south of Perth, in the Margaret River wine region, at the annual Gourmet Escape festival.

In its fourth year, this now world-renowned, three-day smorgasbord of Australian produce and drink is centred on the small but smart town of Margaret River, which works as a perfectly good base for a three-day stay.

You can do it in a day from Perth but your liver would never forgive you. Like the Bordeaux wine area in France it sits just along the coast, with pleasant undulating hills.

Unlike Bordeaux, however, the lush green vineyards rub up against acres and acres of local gum trees, giving it a typical Australian setting.

The most agreeable and surprising aspect to the region is the climate, which is at least four degrees cooler than Perth and, for a British visitor, very welcome.

Cool, coastal breezes take the edge off hot days topping 32C. Each year the festival attracts household names from around the world, including from Asia and Europe.

Last year, it was Rick Stein, Marco Pierre White and Antonio Carluccio. The chefs either cook for special events, or hold Q&A sessions at which canapés and champagne are served.

Don’t be misled, you won’t be languishing in a leaky marquee. This is five-star treatment all the way.

Rick, along with son Jack Stein, this year served up local lobster on the longest wooden jetty in Oz. But if you intend to visit the festival you must book early as demand is extremely high. We attended two “Gourmet Beach BBQs”, in which a guest chef from Sydney threw a lamb cutlet or two on the barbie, washed down with boutique beer.

Prawns are available too. In fact there’s an abundance of local fish, which I sampled on a lunchtime cruise aboard the Kimberley Quest. We watched a sous chef fillet a fresh barramundi on the stern of the ship.

It was served with dill pickle and tartare sauce as we spotted dolphins bobbing in the waves. That event cost $ 220 (£133 a head), a once-in-a-lifetime treat.

If you don’t fancy the special events, you could quite happily eat and drink yourself silly (and safely of course) for a day at the Gourmet Village for $ 40 (£24 a head) located at the highly-rated Leeuwin Estate vineyard, a 10-minute drive from Margaret River.

Here you will see many favourite TV chefs and you can sample the “world’s best chardonnay”, at one of the most picturesque vineyards in Australia. Festival or not, Margaret River is an enticing wine region, which will leave you desperate to return.

The beautiful Swede will appear on the BBC One show, which sees famous names compete against each other with their culinary skills, later this year, according to The Sun.

The newspaper said Gogglebox’s Reverend Kate Bottley and former S Club 7 singer Rachel Stevens will also join the series, featuring judges John Torode and Gregg Wallace.

Swedish-born presenter and former Shooting Stars regular Jonsson was a contestant in a one-off MasterChef celebrity special in 2000.

A spokesman for MasterChef said: “We don’t comment on speculation and we will be announcing the full line-up later this year.”
