ZUTATEN

für 18 Stück

450 g mehlig kochende Kartoffeln

150 g gehackte Zwiebeln

6 EL ungesalzene Butter

50 g Cheddar

50 g Crème Fraiche

1 TL Salz

1 TL Pfeffer

150 g Mehl

80 ml warmes Wasser

1 EL Olivenöl

1 großes Ei, leicht geschlagen

10 frische Blätter

ZUBEREITUNG

1. Die Kartoffeln in einen mittelgroßen Topf mit kaltem Wasser geben. Abdecken und bei mittelstarker Hitze zum Kochen bringen. Die Kartoffeln 20 bis 20 Minuten kochen lassen, bis mit einer Gabel einfach aufzuspießen sind.

2. Während die Kartoffeln kochen, zwei EL Butter in einer mittelgroßen Pfanne bei mittelstarker Hitze schmelzen lassen. Die Zwiebeln hinzufügen und 8 bis 10 Minuten dünsten bis sie goldbraun sind. Pfanne vom Herd entfernen.

3. In einer mittelgroßen Schüssel Mehl, Wasser, Olivenöl, Ei und eine Prise Salz mithilfe einer Gabel miteinander vermengen. Dann mit den Händen 2 bis 3 Minuten kneten bis ein glatter Teig entsteht.

4. Den Teig zu einer flachen Scheibe formen und dann mit Frischhaltefolie abgedeckt mindestens 30 Minuten kühlen.

5. Die gekochten Kartoffeln abgießen und in eine mittelgroße Schüssel geben.

6. Den Käse hinzufügen damit er schmilzt. Dann die glasierten Zwiebeln, Crème Fraiche, Salz und Pfeffer hinzugeben.

7. Kartoffeln und restliche Zutaten erst mit einer Gabel, dann mit einem Teigspatel zu einer glatten Masse rühren. Mit Plastik abdecken und 15 Minuten in den Kühlschrank stellen.

8. Den Teig aus dem Kühlschrank nehmen und auf einer mit Mehl präparierten Oberfläche platzieren. Etwas Mehl darauf geben und den Teig etwa 3 mm dick ausrollen.

9. Mithilfe eines Glases Kreise ausstechen. Die Teigreste aufsammeln und erneut ausrollen, dann 5 Minuten warten. Weitere Kreise ausstechen und mit Frischhaltefolie abdecken, damit sie nicht austrocknen.

10. Um die Teigtaschen zu formen, einen Esslöffel der Kartoffelmasse in die Mitte eines Teigkreises geben. Den Teig vorsichtig rund um die Füllung formen und die Ränder mit den Fingern zusammenpressen.

11. Mit dem restlichen Teig und der restlichen Füllung wiederholen.

11. Den Teig 10 Minuten in den Kühlschrank geben, falls er zu warm wird.

12. Einen großen Topf voll Wasser zum Kochen bringen. Die Teigtaschen darin kochen, wenn nötig Stück für Stück. Jeweils 3 Minuten bis sie an der Oberfläche schwimmen – Vorsicht, die Teigtaschen nicht zu lange kochen!

13. Die Teigtasche mithilfe eines Schöpflöffels aus dem Wasser entfernen und in eine geölte Schüssel geben, damit sie nicht aneinander kleben.

14. Vor dem Servieren, 4 EL Butter in einer antihaftbeschichteten Pfanne bei mittlerer Hitze zum Schmelzen bringen. Sobald die Butter geschmolzen ist, die Salbeiblätter hinzufügen.

15. Braten, bis die Butter braun wird und nussig riecht, etwa 2 bis 3 Minuten.

16. Die Hitze reduzieren und die Teigtaschen Stück für Stück hinzufügen, damit die Pfanne nicht überfüllt ist.

17. Die Teigtaschen leicht anbräunen, etwa 2 Minuten pro Seite. Dann Pfanne vom Herd nehmen.

18. Mit brauner Butter sowie Salz und frisch gemahlenem Pfeffer servieren.

Stomach bloating could be avoided by eating avocados instead of butter, it has been claimed.

That’s according to health and wellness author Maeve Madden.

Writing in her book ‘Beat Your Bloat’ she decried butter, and other dairy products, as her bloating “arch enemy”.

“Dairy makes me so bloated it looks like I’m pregnant with a small elephant,” she wrote.

“My functional medicine doctor told me that if you get little bumps or red marks on the backs of your arms (the triceps) that could mean, and more than likely does mean, that you have an intolerance or sensitivity to lactose.”

In her ‘Eat this, Not That!’ chart, Maeve recommended swapping out butter for avocados to help with stomach bloating.

This fruit is famous for its nutritious and health benefits.

“While most fruit consists primarily of carbohydrate, avocado is high in healthy fats,” said Healthline.

“Avocado is prized for its high nutrient value and is added to various dishes due to its good flavour and rich texture.

“The fruits also contain more potassium than bananas, linked to reduced blood pressure.”

The United States Department of Agriculture said each 100 grams of avocado contain 160 calories, 15 grams of fat and 485 milligrams of potassium.

The fruit also has vitamin C, B6 and A, as well as some iron and magnesium, they continued.

Clinical Nutritionist Dr Josh Axe said avocados should be ranked as “one of the top five healthiest foods on the planet”.

“I know of few other foods that are so jam-packed with essential nutrients,” he continued.

“Especially when you consider how great avocados taste!”

While Maeve may be bloated by dairy, this symptom is common in people with lactose intolerance.

The NHS described this as a “common digestive problem where the body is unable to digest lactose, a type of sugar mainly found in milk and dairy products”.

However, dairy products still make up an important part of a balanced diet.

“Milk and dairy products, such as cheese and yogurt, are great sources of protein and calcium,” said the NHS online.

“They can form part of a healthy, balanced diet.”

Avocados could help people avoid heart attack.

Trailers are an under-appreciated art form insofar that many times they’re seen as vehicles for showing footage, explaining films away, or showing their hand about what moviegoers can expect. Foreign, domestic, independent, big budget: What better way to hone your skills as a thoughtful moviegoer than by deconstructing these little pieces of advertising?

This week we try and connect with our troubled kid, make a one-night-stand a 24-hour stand, learn about a futurist that isn’t named Steve Jobs, and spend some time with the Dallas Cowboys.

 

And Then I Go

This one is based on a book, Project X, but this is the most interesting line from Publisher’s Weekly about it:

This engrossing novel gives the overworked subject of Columbine-style school massacres an unusually subtle and affecting treatment.

Seen through that prism, you can see how the trailer, at least initially, seems like a cheesy family drama. As things progress, though, it’s just engrossing as the proverbial wheels come off our protagonist. Director Vincent Grashaw appears to have a great vehicle for the almost-always fantastic Melanie Lynskey, a quite evocative Justin Long, and also Tony Hale bringing up the rear. Things get more and more intense the deeper we go here. Having never read the book, I can only guess how this will end. In an era of bullies, and the bullied wanting to get their pound of flesh, it’s all too relevant in today’s society.

Duck Butter

Director Miguel Arteta has a stacked deck with Alia Shawkat, Mark Duplass, Jay Duplass, and Kumail Nanjiani, but the trailer here really excels when it focuses on Shawkat and Laia Costa. These two women pledge to spend 24 straight hours together in order to speed through those awkward moments when people try and initially figure each other out as partners. The net result of this is something that is wickedly intriguing as an idea, and executed here with enough aplomb, to make this one a must-see. I don’t know what grand revelations we will see by the end of this experiment, but, like when it comes to dating, it’s all about how we got there that is most important anyway.

Closer Than We Think

This is the kind of documentary that is meant to be on a platform like Netflix. Director Brett Ryan Bonowicz examines the contributions of Arthur Radebaugh, a man labeled a “futurist, illustrator, airbrush artist, and industrial designer.” While this doesn’t seem like a scintillating individual upon which to base an entire documentary, the trailer makes a fantastic case why this could be completely engrossing. When you think about all the people that have been associated with predicting the iWatch’s eventual introduction decades ago, this guy might have a case.

Even beyond the practical considerations of being a futurist who designed a time that has yet to fully come, the trailer is gorgeously elegant. It’s so smooth in transitioning from one moment to the next, it’s never jarring, and the entire narrative is delightfully created brick by visual brick. By the end we should get who this man is and find a compelling case why you should give it your consideration.

All or Nothing: The Dallas Cowboys

One of the best shows on HBO that doesn’t involve animatronic cowboys or flying lizards is Hard Knocks. I don’t know how many dudes are supposed to be on the football field at any one time, I think the NFL is a craven organization, and I believe football does severe harm to many who subject themselves to multiple seasons. That said, Hard Knocks is incredible. To get a glimpse into meritocracy in action, there is no substitute. You either perform, or the coach’s assistant tells you to turn in your playbook and GTFO. The story lines that are presented, the hopes and dreams of some of these guys are just emotional at times, it all makes for great viewing. The problem is, though, the season is way too short with only a little more than a handful of episodes.

That’s unacceptable.

There is an entire story unfolding every single week, every single day within these teams. Amazon brilliantly sees the upside in making a show like this and the trailer is bananas. This is the show that Hard Knocks could be but, for whatever reason, is not. Let me see, literally, an entire season. Make it baseball, make it basketball, I don’t care, when you’re having to be your best every day to prove you should be there, this is the best kind of drama there is.

PC gamers are nothing if not passionate. They’re often labeled as “enthusiasts” and even “hardcore,” but whatever label seems most fitting, PC gamers comprise a group of more than 1.2 billion individuals around the globe. This number is only growing, and its upward swing is directly connected to the surging esports industry. Market research firm Newzoo estimates the esports economy to reach nearly $ 700 million this year, representing a year-on-year growth of 43 percent. By 2020, Newzoo expects that to more than double, reaching $ 1.5 billion.

What once seemed like a stagnant market for PC gaming is now on the rise, thanks in large part to esports. PC hardware manufacturers are reaping the benefits, and have the potential to profit more.

The growing relationship between PCs and esports

PC gamers have traditionally eschewed the one-size-fits-all console approach, and the rise of esports and competitive video game tournaments has made the need for hardware customization even greater. This is apparent in the increasing popularity and acceptance of competitive gaming and has attracted even more hardcore PC users, with many wanting to build their own systems.

In response, PC manufacturers are driven to continue to offer the latest high-performance processors and graphics cards for customization for those players who want to be at the top of their game (or just want the latest-and-greatest gear). As the number of players in esports continues to rise, hardware manufacturers must continue to expand their offerings, especially through new avenues such as VR. It’s a great thing for both hardware manufacturers and the gamers themselves to push each other to even greater heights.

But this is only one side of the coin for how these two groups are becoming more tightly knit.

Development with the gamer in mind

Like the PCs developed and marketed for travelers with privacy screens and durable construction, esports requires a specific approach to ensure gamers have a glitch-free experience during critical sports competitions. In esports, computing power is king — a slow processor can be the difference between winning and losing. Manufacturers who already have experience creating powerful PCs for the enterprise have an advantage, but that does not mean vendors can rest easy.

As we inch closer to quantum computing, the rise of esports will be a critical blueprint for how to design, produce, market, and continue to innovate the next generation of powerful PCs. This also means making components more flexible for memory upgrades, for example, without having to replace the entire machine. For many teams designing with the enterprise or consumer in mind, a new approach must be taken to meet the new demands of esports competitors, and to drive forward the next era of computing that will be required for the future.

Investing in success

The rapid growth of esports is also attracting corporate investment through sponsorships and partnerships covering athletes, leagues, and major events. Such investment is helping to champion and spur further growth in the market. Among those leading the charge are PC hardware manufacturers who have the opportunity to showcase innovations to the gaming community in a live setting.

According to Newzoo, this sponsorship spending will soar to $ 655 million by 2020. For esports players, this brings new opportunities, driving ability to further refine their craft—with some players even becoming full-time professionals.

For marketers, this is an opportunity to reach new, highly-engaged audiences. And for PC manufacturers, there is an enormous opportunity to become even more deeply entrenched in the industry, better understanding the customer to deliver the best products possible. Without invaluable feedback from the players themselves, manufactures are losing critical intelligence to push the boundaries of their products.

Following the current blueprint for success

Taking the NFL as an example, it’s easy to see the vision for opportunity in the coming years. According to IEG research, sponsorship spending on the NFL and its 32 teams rose 4.3 percent to $ 1.25 billion in the 2016-2017 season — a staggering figure illustrating the possibilities for growth in esports.

But there are challenges ahead. For example, non-endemic brands also are getting involved in sponsorship, but to be successful, they must understand the environment and the audience. Gamers, of whom millennials make up a significant share, look for authenticity. In order to become part of esports and build trust with players and fans, these elements are essential.

With the PC industry and esports teaming up, the new opportunities are opening up for players, brands, and sports fans are endless — but it’s up to both parties to make the relationship a successful one.

A viral diet that’s been shown to burn 10 times more fat than a standard diet is gaining momentum among Silicon Valley tech workers. And it involves eating a lot of fat.

The ketogenic or “keto” diet — which first became popular in the 1920s as a treatment for epilepsy and diabetes — limits carbohydrates to no more than 50 grams a day, which is the rough equivalent of a plain bagel or a cup of white rice. By comparison, dietary guidelines from the US Department of Agriculture recommend between 225 and 325 grams of carbs a day.

On the keto diet, the body goes into starvation mode and taps its fat stores for fuel. Studies suggest the low-carb, high-fat diet may promote weight loss, improve focus, and stave off age-related diseases. More research is needed on its long-term effects, especially in healthy people.

A small study recently published in the journal Diabetes and Metabolic Syndrome found that adults who had been diagnosed with metabolic syndrome (a precursor of diabetes) and ate a ketogenic diet had resting metabolic rates (a measure of how much energy your body burns when at rest) over 10 times higher than people who ate a standard diet.

Earlier this year, I spent two months eating bacon, butter, and avocados to see why the keto movement is so popular with tech workers. Here’s what it was like.

I am no stranger to diets. I’ve cut sugar, counted points on Weight Watchers, and swapped solid food for Soylent, a venture-capital-backed meal-replacement shake.

 

But those usually don’t last long. I love food. I’m a chronic snacker.

When I first learned about the keto diet, it caught my interest because dieters could eat seemingly unlimited amounts of healthy fats, like cheese, nuts, avocado, eggs, butter — foods that have high “point values” on Weight Watchers and are severely restricted.

The keto diet reorganizes the building blocks of the food pyramid.

It cuts down carbs to between 20 and 50 grams a day, depending on a person’s medical history and insulin sensitivity. (There are about 30 grams in one apple or one-half of a plain bagel.)

On the diet, healthy fats should account for approximately 80% of a person’s daily calories, while protein should make up about 20%. On average, Americans get about 50% of their calories from carbs, 30% from fat, and 15% from protein, according to the Centers for Disease Control and Prevention.

He made decent money. He started paying off his student loans. He taught subjects he liked (physical education and science) in a school he loved.

But the one-time competitive rugby and hockey player wondered if he just might have fast-forwarded into responsible adulthood.

So one Friday, Greszczyszyn — better known by his friends as Grizz —called in sick for work and flew out to Calgary to try skeleton at Winsport’s Canada Olympic Park. He quietly borrowed a speed suit  — one that just happened to resemble a cow in honour of Halloween — from a student.

“I didn’t realize that it would be that hard going down the track ,” he says, laughing at the memory of his maiden voyage. “And after hitting a couple of walls, I pretty much had no arms left. I had to duct-tape the arms and buy the guy a new speed suit when I got back.”

Upon returning to the classroom, a battered and bruised Greszczyszyn couldn’t shake the thought of skeleton.

A year later, the Brock University product moved to Calgary in hopes of one day representing Canada at the Winter Olympics in a sport that requires athletes to slide down an icy track on a small sled that resembles a cafeteria tray.

“My gut told me that was the choice to make,” says Greszczyszyn, now 38 and in the hunt to qualify for the 2018 Winter Games in Pyeongchang, South Korea. “I told myself that there would be other teaching jobs and that I could make this work.

“I realized I was getting a bit older and that there was no time like the present. I didn’t want to be sitting on the couch down the road regretting not giving it a try.”

Tight times

In truth, there were days in the beginning when he might have regretted giving up his teaching paycheque.

“I went from having a full-time teaching job to scraping by as an athlete,” he says. “But so far, it’s been worth the journey.”

The early stages of the journey featured tight budgets and times when he resorted to eating a lot of bread and peanut butter packets to keep his food costs down.

With his teaching credentials initially not valid in Alberta, he took a job driving a school bus and trained between the morning and afternoon runs. Then he graduated to driving buses on-call for Greyhound.

“The Greyhound is a nice office,” says Greszczyszyn, who will compete for Canada this Saturday in World Cup skeleton action at the Whistler Sliding Centre (watch live on CBCSports.ca at 1 p.m. ET).

“I prefer my skeleton office shooting down the track all over the world at average speeds of 120 to 140 km/hr. But Canada is a beautiful country. Driving around the prairies and through the mountains out to B.C. — in summer and winter — is beautiful.

“Sometimes, it was a bit stressful in crazy snowstorms. But skeleton racing and driving passenger vehicles can go hand-in-hand. The skeleton experience helps with the nerves when you’re on the highways.”

When it comes to skeleton, Greszczyszyn has navigated his share of ups and downs on and off the track. An overnight success story, he is not.

“There have been a lot of disappointments along the way,” says Kirk Robertson, who coached Greszczyszyn as a teenager in rugby. “But Grizz is a risk taker, and I respect him for it. 

“Teachers in general are a pretty conservative bunch. So when it comes to leaving a full-time contract, many teachers would have said he was crazy. But it made sense if you knew Grizz. And look at where he is now.”

‘Don’t look back’

Determined and driven, Greszczyszyn finally cracked the World Cup skeleton team in 2013, only to tear his hamstring and narrowly miss out on qualifying for the 2014 Sochi Games.

“I knew I didn’t want to give up,” Greszczyszyn says. “I didn’t want to go back to Brampton [his hometown in Ontario] and be like, `I couldn’t do it.’ 

“I know it’s OK to fail. As a teacher, sometimes we fail. But this was just something I wasn’t going to let happen.”

At 38, Greszczyszyn is a two-time Canadian skeleton champ coming off a 10th-place finish at the 2017 world championships in Koenigssee, Germany.

Now a substitute teacher in Calgary, he hopes to nag one of the two or three available Canadian spots at the Pyeongchang Games.

Fellow Canadian Duff Gibson won skeleton gold at age 39 at the 2006 Turin Olympics, so Greszczyszyn doesn’t see age as a barrier to success.

“Some days I feel old,” Greszczyszyn says. “But most of the time I feel really young, and I know I can compete with these guys.

“I’m pretty bullheaded. I believe it’s always best to look forward. Don’t look back, otherwise you’ll miss what’s ahead.”

Food industry experts say butter-rich treats such a biscuits, shortbread and fudge are facing a massive rise in costs as a result of the surge in butter prices.

Wholesale butter prices have rocketed by 73 per cent in the past year.

Since then biscuit makers have absorbed the cost increases, but now prices are set to rise.

Last week members of the Food and Drink Federation in Scotland held ‘crisis’ talks with biscuit makers to discuss impending price rises, according to The Grocer trade magazine.

It is feared the price rises could come in before the key biscuit buying season at Christmas.

Makers of shortbread and fudge are believed to particularly vulnerable to hikes in the price of butter.

Biscuit makers in England have also raised concerns over financial pressures resulting from the butter shortage, caused by low milk fat supplies across Europe and higher consumer demand.

People in Far East countries such as China and Japan, who traditionally shunned dairy products, are adopting more Western diets and this has increased demand for butter worldwide.

Sian Holt, of sweet treat maker Fudge Kitchen, in Kent, said butter prices started rising after the Brexit vote.

She said: “Every small producer who uses butter will have reached the point where they can no longer absorb the costs.”

Karen Crawford, of biscuit giant Elizabeth Shaw, which is based in Bristol, said: “We are very aware of fluctuations in commodity pricing.

“This is having a significant squeeze on manufacturer margins.”

David Thomson, head of the Food and Drink Federation in Scotland, said: “Some businesses are losing money to stay on the shelves.”

Changing demand in the market and imbalances in production threaten to push prices to record levels.

Peder Tuborgh, CEO of Arla Foods, one of the largest dairy cooperatives in the world, with 12,500 dairy farmers in the EU, spoke to Reuters last Friday.

He said: “After the very low prices last year, there is currently a milk crisis all over the world.

“It will definitely not be possible to satisfy the demand until Christmas.”

The EU ended milk quotas last year which rocked the market and led to massive price drops, German newspaper Euractiv reports.

Now there are bottlenecks for milk, cream and butter that are leading to “significant” price increases, explained Tuborgh.

He announced that Arla would increase the price paid by the cooperatives to their farmers in September again – to €38.30 per kilo. This is the third monthly price increase in a row.

At a price of €612 per 100 kilograms, butter is currently on average more than double the price than at the same time in 2016.

The shortfall in the EU market will reach 60,000 tonnes by the end of the year, according to estimates.

The European Commission, however, says that this is not due to milk shortages but changes in demand within the dairy sector.

Speaking to EURACTIV.com, an EU Commissioner said: “In June, production in 19 Member States has increased so much that the losses in the nine others (including France and Germany) have been more than compensated for.”

Overall, the EU executive expects EU milk production to be about one million tonnes higher this year than in the previous year.

“The current butter situation results from fierce competition about the fat percentages in the milk,” the EU official said.

“It is mainly due to the fact that fat milk is increasingly used for the production of cheese. The demand for cheese is currently high and the producers can get higher prices with cheese than with butter production.”

Pekka Pesonen, Secretary General of the EU’s Copa-Cogeca farmers’ association, sees another cause of the butter shortage being booming exports to the USA.

There, consumers buy more butter instead of margarine. Pesonen explained that farmers are satisfying the demand for milk fats and do not want to contribute to surpluses in price-damaging products such as skimmed-milk powder.

He said: “What must also be addressed is the inter-relationship between the butter prices in the supermarket and the prices the producers receive. “Producer prices have not risen as much as retail butter prices. The food chain needs to be optimised and work better.”
